I have no clue why ORCHARD is O-CH-A-D  yet  ORCHID  is O-K-I-D

I'm not a language historian but my guess is that the 2 words came from 2 different languages. English is just an amalgam of words borrowed from several  "mother" languages.

As for VIVA VOCE

This one is a Latin (or closely, now Italian) expression but one that has been accepted into English. Such words retain the same pronunciation they had in the "mother" language.

In Latin VOCE  is V-O-CH-E. It's read as in Kiswahili except that C  in Latin is usually a CH sound but sometimes S sound.

I'll give you brief personal story about these C Latin words.

In Canada, there are Calling Cards we buy to use in our phones for calling long distance. I buy them when I have to call Kenya, Tanzania, India, China, etc.,anywhere outside of North America. I guess the cards are equivalent to the Credit you guys buy back home.

One of the most popular Calling Cards here is called CICI  which is an Italian word. Now most places selling these things are shops owned by the Chinese/Koreans. I walk in and I say "I want one CH-I-CH-I Card". The  shopkeeper anabumbwa !!!!  "What?", he asks me.  I repeat, "CH-I-CH-I". We do this back and forth and then a minute later I realize that this shopkeeper will understand me better if I say S-I-S-I. So I say S-I-S-I and all is well. I'm given the card.

I wish I were a language historian to understand why certain words are pronounced a certain way.

I'm not sure about this one but in North  America I hear them say S-K-E-J-U-L

But I suspect that this word has a German origin so my opinion is that the most correct way to pronounce it is: SH-E-J-U-L. 

But I've never heard anyone complain about either version. I use the first one because it's the most common in Canada. When in Rome, do as Romans do.
